Step‑by‑Step Instructions for Authentic Italian Gravy
  1. Preheat your oven to 400°F (200°C). In a large roasting pan, combine the red wine, extra virgin olive oil, beef short ribs, diced onion, minced garlic, salt, and ground black pepper. Mix well, then roast for about 1.5 hours, stirring halfway through.
  2. Transfer the mixture to a stockpot over medium-low heat. Pour in any leftover red wine from the roasting pan and let it simmer for 30 minutes, stirring occasionally.
  3. Add the whole peeled tomatoes, tomato paste, tomato sauce, and beef broth to the stockpot. Stir in the dried basil and oregano. Simmer uncovered for 4 to 6 hours, stirring occasionally.
  4. Gently remove the short ribs from the sauce. Optionally stir in cooked Italian sausage and simmer for an additional hour.
  5. Serve the sauce generously over your favorite pasta. A sprinkle of chopped fresh parsley can add a lovely touch just before serving.
