For the Meatballs
  • 1 pound Salmon fresh or canned
  • 1 cup Breadcrumbs whole wheat preferred
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1 large Egg or flaxseed meal mixed with water for vegan
  • 1/4 cup Parsley chopped
  • 2 cloves Minced Garlic omit if sensitive
  • 2 tablespoons Lemon Juice or lime juice
  • to taste Salt & Pepper
For the Creamy Avocado Sauce
  • 2 medium Avocado ripe
  • 1/2 cup Greek Yogurt or plant-based yogurt for vegan
  • 2 tablespoons Lime Juice or lemon juice
  • 1 clove Garlic reduce or omit if desired

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper.
  3. Scoop out the mixture and roll it into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Transfer the baking sheet to the oven and bake the salmon meatballs for 15-18 minutes.
  5. In a blender or food processor, combine ripe avocado, Greek yogurt, lime juice, and garlic. Blend until smooth and creamy.
  6. Serve the baked salmon meatballs warm with the creamy avocado sauce on the side.
