  • 2 cups Spinach thawed and drained
  • 1 medium Onion sliced
  • 2 cloves Garlic minced
  • 1/2 cup Sour Cream or Greek yogurt
For the Topping
  • 1 cup Mozzarella shredded
  • 2 tablespoons Olive Oil for sautéing

Step-by-Step Instructions
  1. Heat olive oil in a skillet. Sauté sliced onion for 3-4 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in thawed spinach and cook for 2-3 minutes. Season with salt and pepper, then mix in sour cream.
  4. Preheat oven to 175°C (347°F). Cut salmon fillet into 4 portions and season with salt and pepper.
  5. Sear salmon in a pan for about 2 minutes on each side.
  6. Grease a baking dish and place salmon skin-side down. Spread spinach mixture over salmon and top with mozzarella.
  7. Bake for 15-20 minutes until salmon is opaque and mozzarella is golden.
  8. Let it rest for a few minutes before serving. Garnish if desired.
