Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season chicken thighs with salt and pepper. Heat olive oil in a sauté pan and cook chicken skin-side down for about 5 minutes per side until golden brown.
  3. Remove chicken and shred it with forks. Mix with BBQ sauce.
  4. In the same pan, add olive oil, sliced onions, red wine vinegar, and butter. Cook on low heat until caramelized, about 5 to 10 minutes.
  5. Roll out the pizza dough on a floured surface into a 12-inch circle or 2 mini circles.
  6. Spread remaining BBQ sauce over dough, top with mozzarella cheese, BBQ chicken, and caramelized onions.
  7. Bake in preheated oven for approximately 13 minutes until the crust is golden and cheese is bubbly.
