Step-by-Step Instructions
  1. Marinate the Shrimp: In a medium bowl, combine fresh or thawed shrimp with olive oil and Cajun seasoning. Allow to marinate for at least 15 minutes.
  2. Cook the Fettuccini: Bring salted water to a boil, add fettuccini and cook for 8-10 minutes. Drain and keep warm.
  3. Sauté the Vegetables: Melt butter in a large frying pan, add mushrooms and shallots; sauté for 5-7 minutes until softened.
  4. Cook the Shrimp: In the same pan, add marinated shrimp, cook for 2-3 minutes until pink and opaque.
  5. Prepare the Sauce: Add chicken broth to the pan, bring to a boil, and reduce to about ¼ cup in 3-4 minutes.
  6. Create the Creamy Mixture: Whisk sour cream and cornstarch, stir in reduced broth, then add back to the pan. Cook until sauce thickens.
  7. Combine and Heat Thoroughly: Return shrimp, vegetables, roasted peppers, and capers to the pan, mix well and heat through.
  8. Serve and Enjoy: Place the Blackened Shrimp Stroganoff over fettuccini and garnish with sauce.
