Ingredients

For the Bites
  • 2 cups Greek Yogurt Consider using 2% Greek yogurt for a lighter texture.
  • 2 cups Blueberries Frozen blueberries work well; thaw slightly first.
  • 2 tablespoons Honey Swap for erythritol or stevia for keto-friendly option.
  • 2 tablespoons Lemon Juice Fresh lemon juice is key for the best taste.
  • 1 tablespoon Chia Seeds Optional but adds great value.
  • 1 teaspoon Vanilla Extract Omit if a simpler taste is preferred.
For the Topping
  • 1/4 cup Crushed Almonds or Coconut Flakes Sprinkle on top before freezing for added crunch.

Equipment

  • small saucepan
  • Medium mixing bowl
  • Mini silicone muffin tray or ice cube tray

Method

Step-by-Step Instructions
  1. In a small saucepan, combine fresh or slightly thawed blueberries, lemon juice, and honey. Simmer for 5–6 minutes until thickened and syrupy. Mash blueberries for a jam-like consistency, stir in chia seeds, and let cool completely.
  2. In a medium mixing bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth and creamy. Adjust sweetness by adding more honey if desired.
  3. Spoon 1 tablespoon of the whipped yogurt into each cavity of a mini silicone muffin tray, filling them about three-quarters full.
  4. Add ½ teaspoon of the cooled blueberry compote on top of each yogurt layer. Swirl gently without fully mixing to create visual appeal.
  5. Place the filled tray flat in the freezer for at least 2 hours until solid. Let sit for 2–3 minutes before popping out if using a hard mold.
  6. Once frozen, transfer the bites to an airtight container and store in the freezer for up to 2 weeks. Allow to sit at room temperature for 2–4 minutes before enjoying.
