  • 1 tablespoon Lemon Zest Freshly grated enhances freshness.
For the Dressing
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 2 tablespoons Sugar
  • 2 tablespoons Poppy Seeds
  • 2 tablespoons Lemon Juice Freshly squeezed preferred.

Method
 

Preparation
  1. In a small bowl, whisk together mayonnaise, sour cream, sugar, poppy seeds, and lemon juice until smooth and creamy.
  2. Wash the chopped broccoli thoroughly under cold water and chop into bite-sized florets.
  3. In a large mixing bowl, combine chopped broccoli, fresh blueberries, dried blueberries, chopped cashews, chopped green onions, and lemon zest. Toss gently.
  4. Drizzle the lemon poppyseed dressing over the salad, tossing gently to coat.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
