Ingredients
  

For the Salad
  • 4 cups Mixed Salad Greens Any seasonal greens like kale or butter lettuce.
  • 1 cup Strawberries Hull and slice.
  • 1 large Orange Segmented.
  • 1 medium Cucumber Sliced into thin rounds.
  • 1 small Red Onion Soak in water for 10 minutes to mellow.
  • 1/2 cup Feta Cheese Optional, can substitute with goat cheese or omit.
  • 1/4 cup Walnuts/Pecans Toasted for crunch.
For the Citrus Vinaigrette
  • 1/4 cup Olive Oil Extra virgin for best flavor.
  • 2 tablespoons Orange Juice Freshly squeezed.
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Honey/Maple Syrup For sweetness, optional.
  • to taste Salt and Pepper Essential for seasoning.

Method
 

Preparation Steps
  1. Wash and dry the mixed salad greens in a salad spinner.
  2. Hull and slice the strawberries, segment the orange, and slice the cucumber into thin rounds.
  3. Thinly slice the red onion.
  4. In a medium bowl, whisk together the olive oil, orange juice, lemon juice, honey or maple syrup, salt, and pepper until emulsified.
  5. In a large serving bowl, combine the salad greens, strawberries, orange segments, cucumbers, and red onions.
  6. Drizzle the vinaigrette over the salad mixture and gently toss to coat.
  7. Before serving, sprinkle crumbled feta cheese and toasted walnuts or pecans over the top.
  8. Serve immediately in a wide, shallow bowl.
