  • 2 cups cherry tomatoes halved
  • 8 ounces fresh mozzarella cut into bite-sized pieces
  • 1 cup fresh basil chopped
  • 8 ounces short pasta like penne
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or red wine vinegar

Method

  3. Combine the Salad: In a large mixing bowl, combine the cooled pasta, halved tomatoes, mozzarella, and basil. Gently fold to mix.
  4. Dress the Salad: Drizzle with olive oil and balsamic vinegar, and season with salt and pepper. Mix to combine.
