  • 4 fillets Salmon Can substitute with flounder or catfish.
For the Spice Mix
  • 2 teaspoons Curry powder Use Caribbean-style for authentic taste.
  • 1 teaspoon Garlic powder Can substitute with fresh garlic (2-3 cloves).
  • 1 teaspoon Smoked paprika Swap with regular paprika if preferred.
For Cooking
  • 2 tablespoons Olive oil Coconut oil can be used for more coconut flavor.
For the Sauce
  • 1 cup Onions Chopped, any color of bell pepper can be used.
  • 1 cup Bell peppers Chopped.
  • 1 can Coconut milk Full-fat recommended for richness.

Step-by-Step Instructions
  1. Pat the salmon fillets dry with paper towels. Mix salt, pepper, curry powder, garlic powder, and smoked paprika in a small bowl. Rub the mixture on both sides of the salmon.
  2. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, place the salmon fillets in the skillet. Sear for 4-5 minutes on each side until golden brown. Remove salmon and set aside.
  3. In the same skillet, add more olive oil if necessary and sauté chopped onions and bell peppers for 3-4 minutes until softened.
  4. Stir in remaining curry powder and pour in the coconut milk. Let the sauce simmer for 3-5 minutes until slightly thickened.
  5. Gently add the seared salmon back into the skillet, spooning the sauce over the top. Cook for an additional 1-2 minutes until heated through.
