Ingredients

For the Casserole
  • 2 cups Cooked Chicken Use shredded rotisserie chicken for convenience.
  • 2 cups Cooked Rice Ensure it’s fluffy and tender; white or brown rice works well.
  • 2 cups Broccoli Florets Fresh or frozen; thawed and drained if using frozen.
  • 1 can Cream of Chicken Soup Creates a creamy base; can swap with cream of mushroom.
  • 1 cup Sour Cream Adds richness; plain Greek yogurt is a healthy alternative.
  • 1/2 cup Milk Helps loosen the mixture; chicken broth can enhance flavors.
  • 2 cups Shredded Cheddar Cheese Replace with Colby Jack or mozzarella if desired.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Topping
  • 1 cup Breadcrumbs Provides a crunchy layer; mix with melted butter if desired.

Equipment

  • 9x13-inch casserole dish

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with butter or cooking spray.
  2. Cook rice according to package instructions until fluffy and tender. Lightly steam or blanch broccoli florets in boiling water for 2-3 minutes until bright green, then drain well.
  3. In a large mixing bowl, combine cooked rice, shredded chicken, broccoli, cream of chicken soup, milk or chicken broth, 1 cup of cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir until evenly coated.
  4. Spread the mixture evenly in the prepared dish and press down gently. Sprinkle remaining cheese on top, and add breadcrumbs mixed with butter if desired.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and continue baking for an additional 15-20 minutes until cheese is melted and top is golden brown.
  6. Allow to rest for 5 minutes before serving, and enjoy with a fresh side salad or garlic bread.
