- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8–10 minutes until al dente. Drain and set aside.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Coat chicken breasts with Cajun seasoning and sauté for 6–7 minutes until golden brown and cooked through. Remove and let rest.
- Make the Creamy Sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and heavy cream, bring to a simmer, then mix in the cheeses until melted and creamy.
- Combine & Simmer: Return cooked rotini and sliced chicken to the skillet, tossing to coat in the sauce. Simmer for an additional 2–3 minutes.
- Serve: Garnish with chopped parsley and extra cheese if desired. Enjoy hot.
