  • 1 clove Garlic Optional, adds flavor.
  • 1 teaspoon Dry mustard powder
For the Cheese
  • ¾ cup Shredded sharp cheddar cheese Primary cheese.
  • ¼ cup Shredded Gruyere cheese Optional.
For Seasoning

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (204°C).
  2. Rinse cauliflower and break into florets. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
  3. In a medium saucepan, melt butter. Optional: add minced garlic and sauté. Whisk in flour for 1 minute. Gradually add milk, whisking until thickened, about 5 minutes. Stir in cream cheese, salt, pepper, and mustard until smooth.
  4. Mix in cheddar and Gruyere cheese until melted. Adjust seasonings if needed, then combine with the roasted cauliflower.
  5. Transfer the mixture to a greased casserole dish. Sprinkle remaining cheddar and Gruyere on top.
  6. Bake for 20-25 minutes until bubbling and golden brown. Broil for 1-2 minutes for a crispy top.
  7. Let cool for a few minutes before serving. Enjoy!
