  • 1 cup Shredded Sharp Cheddar or Mozzarella Cheese can substitute with pepper jack for spicy
  • 1 cup All-Purpose Flour can swap with gluten-free flour
  • 1 teaspoon Baking Powder
  • 2 Large Eggs
  • 1/4 cup Finely Chopped Green Onions can replace with chives or omit
For Frying
  • 1/2 cup Oil for frying, vegetable or canola oil
Optional Seasonings
  • 1 teaspoon Chili Powder for heat
  • 1 teaspoon Paprika or Cayenne for extra flavor

Method
 

Step-by-Step Instructions
  1. Prepare the corn by removing kernels from fresh corn cobs or ensure frozen corn is thawed and drained.
  2. In a large bowl, mix 1 cup of all-purpose flour with 1 teaspoon of baking powder thoroughly.
  3. In another bowl, whisk 2 large eggs and fold in the corn, 1 cup shredded cheese, and 1/4 cup green onions.
  4. Pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix.
  5. Heat oil in a skillet over medium heat. Drop a spoonful of batter in to check if the oil is ready.
  6. Fry dollops of batter for about 3 minutes until golden brown, then flip and fry for another 2-3 minutes.
  7. Transfer fritters to a paper towel-lined plate to drain any excess oil before serving warm.
