- Prepare the corn by removing kernels from fresh corn cobs or ensure frozen corn is thawed and drained.
- In a large bowl, mix 1 cup of all-purpose flour with 1 teaspoon of baking powder thoroughly.
- In another bowl, whisk 2 large eggs and fold in the corn, 1 cup shredded cheese, and 1/4 cup green onions.
- Pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix.
- Heat oil in a skillet over medium heat. Drop a spoonful of batter in to check if the oil is ready.
- Fry dollops of batter for about 3 minutes until golden brown, then flip and fry for another 2-3 minutes.
- Transfer fritters to a paper towel-lined plate to drain any excess oil before serving warm.
