  • 2 cups Red enchilada sauce Green sauce can be substituted.
  • 1 can Tomato soup Can substitute with crushed tomatoes.
  • 6 small Tortillas Corn or flour based on preference.
  • 2 cups Shredded cheddar cheese Consider Monterey Jack for variety.
Optional Toppings
  • 1 cup Sour cream Optional topping for serving.
  • 1 cup Salsa Zesty addition to brighten the dish.
  • 1 cup Guacamole For rich, creamy texture.
  • 1/4 cup Fresh scallions Adds color and flavor.

Instructions
  1. Preheat your oven to 375°F (190°C) or prepare 24 charcoal briquettes if cooking outdoors.
  2. Heat olive oil in the Dutch oven over medium heat. Sauté diced onion for 4-5 minutes until translucent.
  3. Add ground beef, breaking it up, and brown for 6-8 minutes. Season with taco seasoning, salt, and pepper.
  4. In a bowl, combine red enchilada sauce and tomato soup; stir until mixed.
  5. Layer half of the enchilada sauce mixture in the Dutch oven, followed by tortillas, beef, and cheese.
  6. Repeat layering with remaining ingredients, ending with cheese on top.
  7. Cover and bake in the oven for 25-30 minutes until heated through and cheese is bubbling.
  8. Uncover and bake for an additional 5-10 minutes for a crispy top. Let rest for 5 minutes before serving.
