Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine diced Yukon Gold or red potatoes with olive oil, ranch seasoning, salt, and pepper. Toss thoroughly.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet and roast for about 25 minutes, turning halfway.
  4. Add sliced smoked sausage over the roasted potatoes, stir gently, and return to the oven for an additional 15 minutes.
  5. Remove from the oven, sprinkle shredded cheddar cheese over the top, and return to the oven for 5-10 minutes until melted.
  6. Let cool briefly before serving garnished with fresh herbs if desired.
