For the Filling
  • 1 pound Ground Beef can substitute with ground turkey or vegetarian option
  • 1 packet Taco Seasoning watch sodium levels
  • 1/2 cup Water
For the Topping
  • 2 cups Shredded Cheddar Cheese or mix of Cheddar and Monterey Jack
  • 1 cup Sour Cream or Greek yogurt as lighter option
  • 1/4 cup Chopped Green Onions or cilantro
Optional Toppings
  • 1 cup Diced Tomatoes
  • 1/2 cup Jalapeños for a spicy kick
  • 1 medium Avocado sliced

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Wash and cube the russet potatoes. Toss with olive oil and seasonings. Spread on a baking sheet.
  2. Bake the potatoes for 25-30 minutes, flipping halfway through until golden brown.
  3. Cook the ground beef in a skillet over medium-high heat for 5-7 minutes. Drain excess fat, then add taco seasoning and water. Simmer for 5 minutes.
  4. Transfer the roasted potatoes to a casserole dish. Add the taco meat mixture and sprinkle with cheese.
  5. Return to the oven for 5-7 minutes until cheese is melted and bubbly.
  6. Remove from oven and top with sour cream and green onions or cilantro. Add optional toppings if desired.
