Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped walnuts, ground cinnamon, and salt.
  3. In a separate bowl, mix cashew butter, maple syrup, and vanilla extract until smooth and creamy.
  4. Pour the wet mixture over the dry ingredients and gently mix until all oats are coated.
  5. Transfer the granola mixture to the baking sheet and spread it evenly into a single layer.
  6. Place the baking sheet in the oven and bake for approximately 25 minutes.
  7. Remove the granola from the oven and allow it to cool completely on the baking sheet for about 1 hour.
  8. Melt the white chocolate chips and drizzle over the cooled granola before breaking it into clusters.
