Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare the loaf pan by greasing it with unsalted butter and dusting it with flour.
  2. In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. Cream together the softened unsalted butter and brown sugar until light and fluffy.
  4. Add in the eggs one at a time, followed by the Greek yogurt and vanilla extract, mixing until well combined.
  5. Mash the ripe bananas in a separate bowl and stir them into the batter.
  6. Gently fold the dry ingredients into the wet batter until just combined.
  7. Mix together the granulated sugar and ground cinnamon for the cinnamon swirl.
  8. Pour half of the batter into the loaf pan, then sprinkle half of the cinnamon-sugar mixture on top.
  9. Add the remaining batter, followed by the rest of the cinnamon-sugar mixture.
  10. Gently swirl the batter using a butter knife to create a marbling effect.
  11. Bake for 60-65 minutes, checking for doneness with a toothpick.
