  • 1 teaspoon vanilla extract

  • 1 cup chocolate chips semi-sweet or dark chocolate
  • 1/2 cup finely chopped pecans

Step-by-Step Instructions
  1. Prepare Your Baking Dish: Line a 9 x 9 inch baking dish with parchment paper, with overhang.
  2. Set the Nut Base: Spread 1 cup of chopped pecans evenly in the baking dish.
  3. Combine Ingredients: In a medium pot, combine 1 cup of unsalted butter, 1 cup of granulated sugar, 1/4 cup of water, and 1/2 teaspoon of salt. Cook over medium heat, stirring frequently until it melts and bubbles, about 5-7 minutes.
  4. Cook to the Right Temperature: Attach candy thermometer and cook to 300°F, around 8-12 minutes.
  5. Add Vanilla: Remove from heat and stir in 1 teaspoon of vanilla extract.
  6. Pour Over the Nuts: Pour hot toffee mixture over the layer of pecans, spreading evenly.
  7. Add the Chocolate Layer: Sprinkle chocolate chips over warm toffee and let it rest for about 4 minutes.
  8. Swirl and Garnish: Swirl melted chocolate into toffee and sprinkle with finely chopped pecans and optional flaked sea salt.
  9. Cool and Set: Allow to cool completely at room temperature, about 4 hours.
  10. Break and Serve: Lift toffee out and break into pieces.
