Ingredients

For the Pasta Base
  • 12 ounces tri-color pasta Use your favorite pasta shape for a colorful base.
For the Creamy Mixture
  • 1 cup mayonnaise Acts as the base for a luscious dressing; Greek yogurt can be a lighter alternative.
  • 1 packet ranch seasoning Elevates the flavor; feel free to substitute with a cup of bottled Ranch dressing if preferred.
For the Fillings
  • 8 ounces cheddar cheese Cubed; Monterey Jack is a great substitute.
  • 1 cup bacon Cooked and chopped; turkey bacon works well for a lighter version.
  • 1 cup lunch meat ham Diced; turkey or chicken can also be used.
  • 1 cup lunch meat turkey Diced; complements the ham nicely.
  • 1 tomato Diced; any firm tomato variety will do.
  • 1 cup lettuce Chopped; spinach or arugula can be substituted for variety.

Equipment

  • large pot
  • colander
  • mixing bowl
  • Small bowl

Method

Step-by-Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil. Add in the tri-color pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water until cooled.
  2. While the pasta is cooling, gather and prepare the rest of the ingredients. Chop the lettuce, tomato, and diced lunch meats, and cube the cheddar cheese. Cook and chop the bacon until crispy.
  3. In a large mixing bowl, combine the cooled pasta, chopped lettuce, diced tomato, bacon, ham, turkey, and cubed cheese. Mix well.
  4. In a small bowl, mix together the mayonnaise and ranch seasoning until smooth.
  5. Pour the dressing over the pasta mixture and gently toss together until well coated. Season with salt and pepper to taste.
  6. Cover the bowl and refrigerate for at least 6 hours, or overnight. Serve chilled.

Notes

Make sure the pasta is fully cooled before mixing to prevent wilting the fresh lettuce. Adjust mayonnaise based on taste; pasta can absorb liquid. Prepare a day in advance for better flavor.
