For the Chicken
  • 1 lb Boneless Chicken Thighs can substitute with chicken breast, shrimp, or tofu
  • 1 tbsp Curry Powder
  • 1 tsp Garlic Powder fresh garlic can be used for a stronger taste
  • 1 tbsp Paprika
  • 1 tsp Turmeric optional but recommended for added richness
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Oil neutral oil like canola or vegetable works well
For the Sauce
  • 1 medium Onion can be substituted with shallots
  • 2 cloves Garlic minced
  • 2 tbsp Red Curry Paste adjust for desired spice level
  • 1 can Coconut Milk low-fat option available
For the Noodles & Add-Ins
  • 8 oz Udon Noodles use fresh or frozen
  • Veggies of Choice (Optional) use seasonal vegetables or leftovers
For Garnishing
  • 1 squeeze Lime adds freshness
  • ¼ cup Cilantro chopped
  • to taste Red Chili Flakes optional for heat

Method
 

Step-by-Step Instructions
  1. Season the chicken by mixing with curry powder, garlic powder, paprika, turmeric, salt, pepper, and oil in a large bowl.
  2. Heat oil in a skillet over medium heat. Cook the seasoned chicken for 5-6 minutes until golden brown and cooked through. Remove and let rest.
  3. In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until fragrant and translucent.
  4. Add red curry paste to the skillet, stirring for about 1 minute until fragrant.
  5. Pour in coconut milk, stirring to combine. Allow to simmer for 2-3 minutes until thickened.
  6. Add udon noodles and cooked chicken to the skillet, mixing well and cooking for another 2-3 minutes.
  7. Taste and adjust seasoning as needed. Garnish with cilantro and lime juice before serving.
