Step‑by‑Step Instructions
  1. Preheat your oven to 450°F (232°C) and grease an 8x8-inch baking dish with olive oil.
  2. Cut the Yukon Gold potatoes into bite-sized pieces. Toss with olive oil, kosher salt, and black pepper, then roast for 20-25 minutes until fork-tender.
  3. In a medium saucepan, heat butter and a drizzle of olive oil. Sauté chopped shallots for about 5 minutes, then add garlic for an additional minute.
  4. Add heavy cream and fish stock to the pan along with rosemary, lemon zest, juice, Dijon mustard, cayenne pepper, and capers. Let simmer on low for about 5 minutes.
  5. Once the potatoes are done, nestle the cod fillets between them and pour the cream sauce evenly over everything.
  6. Bake for an additional 10-15 minutes until the cod flakes easily with a fork and the sauce bubbles.
  7. Let cool for a minute and sprinkle chopped parsley before serving.
