  • 2 cups Sweet Corn fresh or frozen
  • 2 cups Yellow Squash chopped
  • 3 tablespoons Butter for sautéing
  • 1 cup Onion chopped
  • 3 tablespoons Flour to thicken the sauce
  • 2 cups Milk can use non-dairy alternatives
  • ¾ cup Cheddar Cheese shredded
  • to taste Salt & Pepper for seasoning

  • ½ cup Breadcrumbs optional, mix with cheese for extra flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt 3 tablespoons of butter in a skillet over medium heat. Add 1 cup of chopped onions and cook until soft, about 3-5 minutes.
  3. Stir in 3 tablespoons of flour with the onions to form a roux. Gradually whisk in 2 cups of milk and cook until thickened, about 3-5 minutes.
  4. Remove from heat and stir in 2 cups of sweet corn and 2 cups of chopped yellow squash. Add salt and pepper, then stir in ¾ cup of cheddar cheese.
  5. Pour the mixture into a greased 9x13 inch baking dish. Top with ½ cup more cheddar cheese and breadcrumbs, if desired.
  6. Bake for 25-30 minutes until bubbly and golden.
  7. Let the casserole cool for 5-10 minutes before serving.
