- Preheat your oven to 375°F (190°C).
- Melt 3 tablespoons of butter in a skillet over medium heat. Add 1 cup of chopped onions and cook until soft, about 3-5 minutes.
- Stir in 3 tablespoons of flour with the onions to form a roux. Gradually whisk in 2 cups of milk and cook until thickened, about 3-5 minutes.
- Remove from heat and stir in 2 cups of sweet corn and 2 cups of chopped yellow squash. Add salt and pepper, then stir in ¾ cup of cheddar cheese.
- Pour the mixture into a greased 9x13 inch baking dish. Top with ½ cup more cheddar cheese and breadcrumbs, if desired.
- Bake for 25-30 minutes until bubbly and golden.
