  • 4 cups Low-Sodium Beef Broth
For the Topping
  • 2 cups Gruyère Cheese Freshly shredded
Seasoning

Method
 

Cooking Instructions
  1. Caramelize the onions by melting butter in a pot, adding onions, and cooking for about 20-25 minutes until golden brown.
  2. Add beef broth and thyme, bringing to a gentle simmer for 10 minutes.
  3. In a separate pot, cook pappardelle noodles in salted boiling water according to package instructions until al dente, reserving a cup of pasta water before draining.
  4. Combine the pasta with the onion-broth mixture, tossing gently and adding reserved pasta water as needed for consistency.
  5. Transfer the mixture to an oven-safe dish, top with Gruyère cheese, and broil for 3-5 minutes until cheese is bubbly and golden.
