- In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add 2 minced garlic cloves and 1 tablespoon of minced ginger. Sauté for about 1 minute until fragrant.
- Pour in 4 cups of chicken or vegetable broth, stirring gently to combine. Add 2 tablespoons of soy sauce and 1 tablespoon of rice vinegar, and bring to a gentle simmer.
- Carefully drop in 10-12 frozen potstickers. Stir gently to distribute without breaking, and cook for 5-7 minutes until cooked through.
- Incorporate 1 cup of sliced mushrooms and 2 cups of fresh spinach or bok choy into the pot. Stir well and cook for an additional 2-3 minutes.
- Taste the soup and season with salt, pepper, and optional chili oil. Let it simmer for another minute.
- Ladle the soup into bowls, garnish with chopped green onions and a drizzle of sesame oil. Serve hot.
