  • 2 cloves garlic (minced) fresh preferred

  • 1 tbsp rice vinegar optional
For the Dumplings
  • 10-12 pieces frozen potstickers customize filling as desired
For the Vegetables
  • 1 cup mushrooms (sliced) shiitake or cremini work well
  • 2 cups spinach or bok choy kale can substitute
  • 2 tbsp green onions for garnish
Optional Ingredients
  • to taste chili oil or red pepper flakes for heat
  • to taste sesame seeds for garnish

Step-by-Step Instructions
  1. In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add 2 minced garlic cloves and 1 tablespoon of minced ginger. Sauté for about 1 minute until fragrant.
  2. Pour in 4 cups of chicken or vegetable broth, stirring gently to combine. Add 2 tablespoons of soy sauce and 1 tablespoon of rice vinegar, and bring to a gentle simmer.
  3. Carefully drop in 10-12 frozen potstickers. Stir gently to distribute without breaking, and cook for 5-7 minutes until cooked through.
  4. Incorporate 1 cup of sliced mushrooms and 2 cups of fresh spinach or bok choy into the pot. Stir well and cook for an additional 2-3 minutes.
  5. Taste the soup and season with salt, pepper, and optional chili oil. Let it simmer for another minute.
  6. Ladle the soup into bowls, garnish with chopped green onions and a drizzle of sesame oil. Serve hot.
