Ingredients

For the Salad Base
  • 2 cups Orecchiette Pasta Feel free to swap for gluten-free pasta if preferred.
  • 2 ears Corn Kernels You can also use 1 cup of cooked corn.
  • 1 cup Red Bell Pepper Diced for even mixing.
  • 4 slices Bacon Cooked and sliced; omit for vegetarian option.
  • 1/4 cup Fresh Cilantro Can be substituted with parsley or basil.
For the Creamy Dressing
  • 1 cup Basil Pesto Ready-made or homemade works great.
  • 1/2 cup Greek Yogurt Plain yogurt or sour cream are good alternatives.
  • 1/4 cup Mayonnaise Consider vegan mayo for a plant-based option.
  • 2 tablespoons Lime Juice Lemon juice can also be used.

Equipment

  • large pot
  • colander
  • Mason jar or mixing bowl
  • large mixing bowl
  • spatula

Method

Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add the orecchiette pasta and cook according to the package instructions, usually about 9-12 minutes, until al dente. Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process. Set aside to cool while you prepare the dressing.
  2. In a mason jar or a mixing bowl, combine the basil pesto, Greek yogurt, mayonnaise, and freshly squeezed lime juice. Whisk the ingredients together until smooth and creamy, adjusting the thickness as needed.
  3. In a large mixing bowl, combine the cooled pasta, sweet corn kernels, diced red bell pepper, and crispy, cooked bacon. Gently toss the ingredients together.
  4. Drizzle the prepared creamy pesto dressing over the pasta mixture. Using a spatula, gently fold the dressing into the salad, ensuring all components are coated evenly.
  5. Top the assembled Corn Pasta Salad with freshly chopped cilantro. Serve in chilled bowls, either immediately or refrigerate for about 30 minutes.
