- Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
- In a large mixing bowl, mash the ripe bananas and combine with cottage cheese, eggs, maple syrup, and vanilla extract.
- In another bowl, whisk together almond flour, baking soda, and cinnamon.
- Fold the dry ingredients into the wet mixture until just incorporated.
