Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
  2. Whisk the large eggs in a mixing bowl until slightly frothy, about 1-2 minutes.
  3. Combine the frothy eggs with cottage cheese and mix until smooth.
  4. Fold in the shredded cheddar cheese until evenly distributed.
  5. Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder. Mix well.
  6. Mix the baking powder with a teaspoon of water and fold into the mixture.
  7. Add a drizzle of olive oil and stir until combined.
  8. Fill each muffin cup about three-quarters full with the mixture.
  9. Bake for 18-20 minutes until edges are golden brown and bites have set in the center.
  10. Cool for 5 minutes, then loosen edges and remove from the tin.
  11. Serve warm or store in an airtight container in the fridge for up to 4 days.
