Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or grease it.
  2. Blend together the cottage cheese, rolled oats, eggs, maple syrup, baking powder, and any spices until smooth.
  3. Gently stir in most of the chocolate chips and let the batter sit for about 5 minutes to thicken.
  4. Use a cookie scoop to fill each muffin cup and sprinkle the remaining chocolate chips on top.
  5. Bake for 22-25 minutes, checking for golden tops and a clean toothpick inserted in the center.
  6. Allow the muffins to cool for 5 minutes in the tin before transferring to a wire rack.
