  • 1/2 cup Gruyère Cheese Can substitute with Comté
  • 1/2 cup Parmesan Cheese Can substitute with Pecorino Romano
  • 1/2 cup Fresh Breadcrumbs For topping before baking

Method
 

Step‑by‑Step Instructions
  1. Prepare Cauliflower: Steam or boil cauliflower florets in salted water for about 5-6 minutes until just tender. Drain and set aside.
  2. Preheat Oven and Prepare Dish: Preheat oven to 375°F (190°C) and grease an 8 x 11 x 2-inch casserole dish.
  3. Make the Cheese Sauce: Melt butter in a saucepan, whisk in flour to form a roux, then gradually add milk while whisking. Boil gently and stir in thyme, nutmeg, salt, and pepper.
  4. Add the Cheeses: Remove from heat and stir in Parmesan and Gruyère cheese until melted and smooth.
  5. Assemble the Gratin: Pour a little cheese sauce into the casserole, add cauliflower, then pour remaining sauce over.
  6. Add Toppings: Sprinkle Gruyère and breadcrumbs on top, and garnish with thyme.
