Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Chop your onion and broccoli into small, bite-sized pieces.
  3. In a large mixing bowl, combine the Greek yogurt, cream of chicken soup, half of the shredded cheddar cheese, diced onion, garlic powder, black pepper, and kosher salt.
  4. Carefully fold in the shredded rotisserie chicken, cooked rice, and chopped broccoli into the creamy mixture.
  5. Pour the chicken and broccoli mixture into the prepared baking dish.
  6. In a separate bowl, combine the crushed whole wheat crackers with the melted butter.
  7. Sprinkle the remaining shredded cheddar cheese evenly over the casserole.
  8. Place the casserole in the preheated oven and bake for about 30 minutes.
  9. Once out of the oven, allow the casserole to rest for about 5 minutes.
  10. Before serving, garnish your casserole with fresh parsley.
