  • 8 ounces Cream cheese Full-fat recommended
  • 1 cup Mozzarella cheese Shredded, for topping
  • 1/4 cup Parmesan cheese Optional, can substitute with Pecorino Romano

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Cut chicken breasts in half and pound to even thickness.
  3. Marinate chicken in olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in a large skillet over medium heat for 2-3 minutes until wilted.
  5. Mix cream cheese with sautéed spinach and half the mozzarella until smooth.
  6. Optionally sear marinated chicken in the skillet for additional flavor.
  7. Arrange marinated chicken in the baking dish and spread cream cheese filling over it.
  8. Top with remaining mozzarella and bake for 20-30 minutes until chicken is cooked through.
  9. Let the casserole rest for 5 minutes before serving.
