  • 8 ounces tri-color pasta rotini recommended
For the Dressing
  • 1 cup mayonnaise Greek yogurt can be substituted
  • 2 tablespoons ranch seasoning or bottled dressing as shortcut
For the Add-ins
  • 6 strips bacon cooked, chopped into small pieces
  • 1 cup cheddar cheese or Monterey Jack
  • 1 cup tomatoes diced or cherry tomatoes
  • 1 cup lettuce or spinach
  • 1 cup ham diced
  • 1 cup turkey diced

Method
 

Cooking Instructions
  1. Boil salted water in a large pot. Cook the pasta according to package instructions for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Chop the add-ins: dice cheese, slice bacon, and finely chop lettuce, ham, turkey, and tomatoes.
  3. In a mixing bowl, combine mayonnaise and ranch seasoning, whisk until smooth.
  4. Fold the cooled pasta into the dressing, add cheese, bacon, lettuce, lunch meats, and tomatoes. Toss until evenly coated.
  5. Transfer to an airtight container or cover, refrigerate for at least 6 hours to meld flavors.
  6. Before serving, stir the salad and season with salt and pepper as needed.
