Step-by-Step Instructions
- Begin by peeling and pitting the ripe avocado, then place the flesh in a medium-sized bowl. Using a fork, mash the avocado until it reaches a roughly smooth consistency, with a few small chunks for texture. This should take about 1 minute. Set aside.
- Next, add the cottage cheese, finely chopped chives, and a pinch of fine sea salt and pepper to the mashed avocado. Use a spatula to stir the mixture gently until all ingredients are well combined and creamy. Adjust seasoning as needed.
- Take three slices of your preferred bread and lightly butter or drizzle them with extra virgin olive oil. Heat a non-stick pan over medium heat and place the slices in for about 3-4 minutes, flipping halfway through.
- Once the bread is perfectly toasted, spread the creamy avocado and cottage cheese mixture generously on each slice of toast. Sprinkle red pepper flakes on top and finish with a generous garnish of microgreens or alfalfa.
