Step-by-Step Instructions
  1. Begin by peeling and pitting the ripe avocado, then place the flesh in a medium-sized bowl. Using a fork, mash the avocado until it reaches a roughly smooth consistency, with a few small chunks for texture. This should take about 1 minute. Set aside.
  2. Next, add the cottage cheese, finely chopped chives, and a pinch of fine sea salt and pepper to the mashed avocado. Use a spatula to stir the mixture gently until all ingredients are well combined and creamy. Adjust seasoning as needed.
  3. Take three slices of your preferred bread and lightly butter or drizzle them with extra virgin olive oil. Heat a non-stick pan over medium heat and place the slices in for about 3-4 minutes, flipping halfway through.
