  • 2 cups Broccoli Florets Can be replaced with zucchini or bell peppers.
  • 4 cups Baby Spinach Feel free to swap for kale.
For the Cheese Mixture
  • 16 oz Cottage Cheese (2% MF) Ricotta cheese may work as a substitute.
  • 1 cup Marinara Sauce Any tomato sauce can be used as an alternative.
  • 1 cup Shredded Mozzarella Consider using a mixture of cheeses.
  • to taste Salt
  • to taste Pepper
For the Garnish
  • 1 cup Fresh Basil Dried basil can be used if fresh isn’t available.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Cook the penne pasta in salted boiling water until al dente, about 8-10 minutes.
  3. In a frying pan, sauté minced garlic and broccoli in olive oil for about 7 minutes, then add baby spinach for 2-3 more minutes.
  4. Combine pasta, sautéed vegetables, cottage cheese, marinara sauce, salt, and pepper in the baking dish.
  5. Sprinkle shredded mozzarella on top of the mixture.
  6. Bake for 20 minutes in the preheated oven until cheese is melted and golden.
  7. Garnish with fresh basil before serving.
