  • 6 large hardboiled eggs
  • 8 ounces ditalini/penne/elbow macaroni choose your preferred type
  • 1 cup mayonnaise substitute with plain Greek yogurt for tanginess
  • 2 tablespoons Dijon mustard adjust to suit your spice preference
  • 2 tablespoons white vinegar or lemon juice fresh lemon juice brightens the taste
  • 2 cloves garlic minced finely or crushed
  • 1 teaspoon kosher salt adjust according to taste
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper use sparingly
  • 1/2 cup red onion diced
  • 1/2 cup green onions sliced
  • 4 slices cooked & crumbled bacon optional
For Serving
  • 2 tablespoons extra green onions for garnish
  • 1 teaspoon paprika for garnish

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Peel hardboiled eggs; separate yolks from whites. Chop egg whites into small pieces.
  3. Smash yolks in a bowl; mix with mayonnaise, Dijon mustard, vinegar or lemon juice, minced garlic, salt, smoked paprika, and cayenne. Mix until smooth.
  4. In a large bowl, combine cooled pasta with dressing. Fold in egg whites, red onion, and green onions.
  5. Garnish with green onions and paprika. Serve immediately or refrigerate for a couple of hours.
