  • 1 head Cauliflower frozen is fine if well-drained
  • 1 head Broccoli fresh or frozen works well
  • 6 slices Smoked Applewood Bacon can swap for turkey bacon
  • 2 cups Sharp Cheddar Cheese Colby-Jack can be used for milder flavor
  • 1 cup Sour Cream Greek yogurt can be used for a lighter option
  • 2 tablespoons Butter reduce for a lighter version
For Garnish
  • 2 tablespoons Chives green onions can be used as an alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and crumble the bacon.
  2. Cook the smoked Applewood bacon in a large skillet over medium heat for 8-10 minutes until crispy. Remove and drain on paper towels, reserving drippings in the skillet.
  3. In the same skillet, add cauliflower and broccoli; sauté for 5-7 minutes until tender and slightly golden.
  4. In a mixing bowl, combine sautéed cauliflower and broccoli with crumbled bacon, sharp cheddar cheese, sour cream, and butter. Mix well.
  5. Grease an 8x8 or 9x13 inch baking dish. Transfer the veggie and cheese mixture into the dish, spreading it evenly.
  6. Sprinkle additional sharp cheddar cheese on top. Bake for 20-25 minutes until bubbling and golden brown.
  7. Let cool for a few minutes, then sprinkle chopped chives on top. Serve warm.
