- Preheat your oven to 350°F (175°C). Gather your ingredients and crumble the bacon.
- Cook the smoked Applewood bacon in a large skillet over medium heat for 8-10 minutes until crispy. Remove and drain on paper towels, reserving drippings in the skillet.
- In the same skillet, add cauliflower and broccoli; sauté for 5-7 minutes until tender and slightly golden.
- In a mixing bowl, combine sautéed cauliflower and broccoli with crumbled bacon, sharp cheddar cheese, sour cream, and butter. Mix well.
- Grease an 8x8 or 9x13 inch baking dish. Transfer the veggie and cheese mixture into the dish, spreading it evenly.
- Sprinkle additional sharp cheddar cheese on top. Bake for 20-25 minutes until bubbling and golden brown.
- Let cool for a few minutes, then sprinkle chopped chives on top. Serve warm.
