  • 1 cup ditalini pasta cook separately if preferred
  • 1 cup sour cream or heavy cream; Greek yogurt as a lighter alternative
  • 1 cup parmesan cheese can substitute with asiago or brie

Step-by-Step Instructions
  1. Soak 1 cup of dried mushrooms in boiling water for 10-15 minutes, then chop finely and reserve the soaking liquid.
  2. Melt 2 tablespoons of butter or olive oil in a large saucepan, add 1 chopped onion and 8 ounces of fresh mushrooms. Sauté for 15 minutes.
  3. Stir in 3 cloves of minced garlic, 1 teaspoon of paprika, 1 teaspoon of fresh thyme, and 1 teaspoon of dill and cook for an additional minute.
  4. Add 4 cups of broth and the reserved mushroom soaking water, 2 tablespoons of soy sauce, and 2 teaspoons of Worcestershire sauce. Bring to a boil.
  5. Add 1 cup of ditalini pasta, reduce heat, and simmer for 8-10 minutes until pasta is al dente.
  6. Remove from heat and stir in 1 cup of sour cream and 1 cup of freshly grated parmesan until melted and creamy.
