  • 2 tbsp Olive Oil for sautéing
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 cup Carrot diced
  • 1 cup Celery optional, diced
  • 6 cups Chicken Broth low-sodium preferred
  • 1 can Diced Tomatoes
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper freshly ground, to taste
For Creamy Goodness
  • 1 cup Heavy Cream or half-and-half for a lighter version
  • 1 cup Grated Parmesan Cheese Pecorino Romano as a substitute can be used
For the Pasta
  • 1 cup Ditalini Pasta or small shells or macaroni
For Garnish
  • 1 tbsp Fresh Parsley for sprinkling

Step-by-Step Instructions
  1. Heat the Olive Oil in a large pot over medium-high heat and brown the Italian sausage for 5-7 minutes. Remove sausage and set aside.
  2. Sauté chopped onions, diced carrots, and optional celery in the same pot for 5-7 minutes until softened.
  3. Add minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  4. Pour in chicken broth and diced tomatoes, and bring to a gentle simmer for about 5 minutes.
  5. Sprinkle in Italian seasoning, salt, and black pepper. Simmer for 10-15 minutes to intensify flavors.
  6. Stir in uncooked ditalini pasta and cook for 10-12 minutes until al dente.
  7. Reduce heat to low and blend in heavy cream and grated Parmesan cheese until melted and creamy.
  8. Return the cooked sausage to the pot and heat through for about 5 minutes.
  9. Taste and adjust seasoning, then garnish with fresh parsley before serving.
  10. Serve hot, alongside crusty garlic bread or a fresh green salad.
