Step-by-Step Instructions
  1. Begin by draining the whole kernel corn and placing it in a large mixing bowl. Next, chop the green pepper and finely dice the red onion.
  2. In the same mixing bowl, uniformly combine the drained corn, grated cheddar cheese, and mayonnaise. Stir until well coated.
  3. Gently fold in the crushed Fritos corn chips, being careful not to break them down too much.
  4. Serve the salad immediately or allow it to chill in the refrigerator for up to 2 hours to enhance flavor.
  5. Garnish with additional Fritos Scoops before presentation, if desired.
