Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil or butter.
  2. In a large pot, bring salted water to a boil. Add pasta and cook for 6-8 minutes until al dente. Drain and set aside.
  3. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, cooking for 5-6 minutes until golden brown. Remove and let rest.
  4. In the same skillet, melt butter, add garlic, and sauté for 30 seconds. Add heavy cream and milk, simmer for 2-3 minutes. Stir in basil pesto and Parmesan until smooth.
  5. Return chicken, pasta, and spinach (if using) to the skillet. Toss gently to coat in the creamy sauce.
  6. Transfer the mixture to the greased baking dish, top with mozzarella and Parmesan.
  7. Bake uncovered for 20-25 minutes until cheese is golden and bubbly.
  8. Remove from oven and let rest for 5 minutes before serving.
