- Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil or butter.
- In a large pot, bring salted water to a boil. Add pasta and cook for 6-8 minutes until al dente. Drain and set aside.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, cooking for 5-6 minutes until golden brown. Remove and let rest.
- In the same skillet, melt butter, add garlic, and sauté for 30 seconds. Add heavy cream and milk, simmer for 2-3 minutes. Stir in basil pesto and Parmesan until smooth.
- Return chicken, pasta, and spinach (if using) to the skillet. Toss gently to coat in the creamy sauce.
- Transfer the mixture to the greased baking dish, top with mozzarella and Parmesan.
