Ingredients
  

For the Tortellini
  • 12 ounces Fresh Cheese Tortellini or frozen/dried if needed
For the Beef
  • 1 pound Thinly Sliced Beef (Flank Steak or Sirloin) pre-sliced can save prep time
For the Vegetables
  • 1 cup Bell Peppers (Red and Green) sliced
  • 1 medium Yellow Onion sliced into rings
For the Creamy Sauce
  • 8 ounces Cream Cheese softened
  • 1 cup Shredded Provolone Cheese or mix with mozzarella
  • 1 cup Beef Broth avoid excess to prevent soupy consistency
  • 2-3 cloves Garlic minced

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the tortellini and cook for 3-5 minutes until they float to the top. Drain and set aside.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onion and bell peppers, sautéing for about 5-7 minutes until tender.
  3. Increase heat to medium-high and add the beef. Cook for 4-5 minutes until browned. Remove and keep warm.
  4. Lower the heat to medium, add minced garlic and sauté for 1 minute. Pour in beef broth, then add cream cheese until smooth. Gradually add provolone cheese until melted.
  5. Return beef and vegetables to the skillet. Simmer for 2-3 minutes until heated through.
  6. Add tortellini into the skillet and toss until coated. Serve immediately.
