Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wrap the garlic bulb in aluminum foil and roast for 30-35 minutes until golden brown.
  2. Boil salted water in a large pot. Add the pasta and cook according to package instructions, usually around 8-10 minutes, reserving 1 cup of pasta water before draining.
  3. Heat olive oil in a medium saucepan over medium heat. Add mashed roasted garlic and stir for about 2 minutes.
  4. Lower the heat and pour in heavy cream, stirring well. Heat through for 3-4 minutes without boiling.
  5. Mix in the freshly squeezed lemon juice and zest. Season with salt and black pepper, stirring for an additional 2 minutes.
  6. Gradually sprinkle in Parmesan cheese while stirring until it melts and the sauce is creamy. Add reserved pasta water if it’s too thick.
  7. Drain the pasta and toss it in the saucepan with the sauce, ensuring each noodle is well-coated.
  8. Garnish with chopped fresh parsley and serve immediately with garlic bread or salad.
