  • 1 lb Fresh Salmon skinless fillets preferred
  • 2 tbsp Olive Oil or vegetable oil
  • 1 tbsp Butter replace with more olive oil for dairy-free
  • 1 Onion yellow or white
  • 3 cloves Garlic minced
  • 2 tbsp Thai Red Curry Paste or yellow curry paste for milder flavor
  • 1 tbsp Fish Sauce optional for umami
  • 1 can Full-Fat Coconut Milk light coconut milk can reduce calories
  • 1 tbsp Brown Sugar or coconut sugar
For the Veggies
  • 1 cup Carrots sliced
  • 1 cup Broccolini or regular broccoli
For the Finishing Touches
  • 1 tbsp Lime Juice fresh preferred
  • Fresh Basil & Cilantro for garnishing

Method
 

Preparation Steps
  1. Prepare the salmon by cutting it into four equal pieces, patting dry, and seasoning with salt and pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear the salmon skin-side down for about 5 minutes, then flip and cook for another 2 to 3 minutes.
  3. Remove the salmon and set aside. In the same skillet, sauté chopped onion for about 3 minutes, then add minced garlic and Thai red curry paste, stirring for another minute.
  4. Pour in coconut milk, fish sauce, and brown sugar, then add sliced carrots and chopped broccolini. Cook for another 5 minutes.
  5. Stir in lime juice and return the salmon, warming through for 1 to 2 minutes.
  6. Garnish with fresh herbs and serve warm over rice or noodles.
