- Prepare the salmon by cutting it into four equal pieces, patting dry, and seasoning with salt and pepper.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear the salmon skin-side down for about 5 minutes, then flip and cook for another 2 to 3 minutes.
- Remove the salmon and set aside. In the same skillet, sauté chopped onion for about 3 minutes, then add minced garlic and Thai red curry paste, stirring for another minute.
- Pour in coconut milk, fish sauce, and brown sugar, then add sliced carrots and chopped broccolini. Cook for another 5 minutes.
- Stir in lime juice and return the salmon, warming through for 1 to 2 minutes.
- Garnish with fresh herbs and serve warm over rice or noodles.
