  • 12 oz Spaghetti or any pasta of choice

  • 1 cup Heavy Cream or half-and-half/coconut cream
  • 2 tbsp Olive Oil can swap with butter
  • 3 cloves Garlic minced, fresh preferred
  • ½ cup Grated Parmesan Cheese or nutritional yeast for vegan
  • ¼ tsp Red Pepper Flakes optional
  • Salt to taste
  • Pepper to taste
For the Veggies
  • 4 cups Fresh Spinach can substitute with kale
  • ½ cup Sun-Dried Tomatoes preferably oil-packed
For Garnish
  • ½ cup Fresh Basil optional, can substitute with parsley

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in spinach and sun-dried tomatoes. Cook for 2-3 minutes until spinach wilts.
  4. Pour in heavy cream, mixing well. Let it warm and bubble for 2-3 minutes.
  5. Add grated Parmesan, red pepper flakes, salt, and pepper. Stir until cheese melts and sauce thickens.
  6. Combine drained spaghetti with the sauce in the skillet. Toss to coat evenly.
  7. Remove from heat, garnish with fresh basil, and serve hot.
