Ingredients
  

For the Mousse
  • 1 block Silken Tofu Can substitute with firm tofu for thicker texture.
  • 1/2 cup Smooth Peanut Butter Try almond butter or sunflower seed butter for variation.
  • 1/4 cup Agave Syrup Maple syrup or powdered sugar are great alternatives.
  • 1 teaspoon Vanilla Paste/Extract Vanilla bean powder can also be used.
  • a pinch Salt Balances sweetness.
For the Ganache
  • 1 cup Dark Chocolate Chips (70%) Adjust sweetness if using different dark chocolate.
  • 1/2 cup Full Fat Coconut Milk Chill the can for best texture.

Method
 

Prepare the Mousse
  1. Place silken tofu, smooth peanut butter, agave syrup, vanilla extract, and salt into a blender. Blend on high for 1–2 minutes until smooth.
Chill the Mousse
  1. Transfer the mousse into ramekins or jars, smooth tops, and refrigerate for at least 30 minutes.
Make the Chocolate Ganache
  1. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
Combine Ganache Ingredients
  1. Scoop the solid part of the chilled coconut milk into the bowl with melted chocolate and whisk until smooth.
Assemble and Chill Again
  1. Pour chocolate ganache over the mousse in each ramekin and return to the refrigerator for at least 1 hour.
Serve and Enjoy
  1. Remove the mousse from the refrigerator and let sit for a few minutes before serving. Garnish as desired.
