Step-by-Step Instructions for Veggie Orzo
  1. Begin by finely chopping the broccoli and shredding the carrots to ensure even cooking.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped broccoli, shredded carrots, and minced garlic cloves. Sauté for about 5 minutes until softened.
  3. Stir in 1 cup of orzo and 4 cups of chicken broth. Bring to a gentle boil, reduce heat to low, and let simmer for 10-15 minutes until orzo is tender.
  4. Reduce heat to low and stir in 4 ounces of cream cheese and ½ cup of grated parmesan cheese. Mix until both cheeses melt into the orzo.
  5. Allow to cool for a couple of minutes before serving warm. Can be paired with grilled chicken or fish.
