- In a large pot, heat a drizzle of oil over medium heat. Add chopped onions and minced garlic, stirring frequently for about 3-4 minutes until the onions become translucent and fragrant.
- Add diced chicken breasts to the pot. Cook the chicken for approximately 5-7 minutes, stirring occasionally, until it’s browned on all sides and fully cooked through.
- Once the chicken is ready, stir in the great northern beans, mild green chiles, and chicken broth. Bring the mixture to a vigorous boil over high heat for about 2-3 minutes.
- Reduce the heat to low and let your chili simmer uncovered for 15 minutes, stirring occasionally.
- After simmering, remove the pot from heat, then stir in the cream cheese until it melts completely into the chili.
- Taste the chili and adjust the seasoning with salt and pepper as needed.
