For the Topping
  • 1 cup Shredded Mozzarella Cheese Fresh mozzarella melts best.
  • 1 cup Marinara Sauce Homemade is recommended.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Butterfly the chicken breasts to about ¼ inch thick for even cooking.
  3. Set up a breading station with bowls for flour, whisked eggs, and a breadcrumb mixture.
  4. Dredge each chicken cutlet in flour, then egg wash, and finally in the breadcrumb mixture.
  5. Bake the chicken cutlets for 15 minutes, then flip and bake for another 15 minutes until golden brown.
  6. Top each cutlet with marinara sauce and mozzarella cheese, then broil for about 2 minutes.
  7. Serve hot over whole grain pasta or alongside a salad.
